This is because the Medium Chain Fatty Acids (MCFA) are smaller, require less energy and fewer enzymes to break them down for digestion.  They are also digested and absorbed quickly and with minimal effort.

They are broken down almost immediately by enzymes in the saliva and gastric juices so that pancreatic fat-digesting enzymes are not even essential.

This is very beneficial for infants and elderly who have less enzymes to digest Long Chain Fatty Acids (LCFA).
