When mixed with other ingredients coconut oil becomes more tolerable and delectable. This is one of those recipes that is so simple to make even I can't stuff it up!
Coconut Oatmeal Cookies:
1 cup brown sugar or coconut sugar
1/2 cup coconut oil
1/2 teaspoon vanilla extract
1 1/2 cups flour
1 cup oats
1/2 cup shredded or grated coconut
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup walnuts, chopped
Preheat oven to 190 degrees C. Mix together sugar, coconut oil, eggs and vanilla.
In a separate bowl, combine flour, oats coconut, baking soda, cinnamon, and salt, stir into wet mixture
Fold in walnuts
Roll into 4 cm balls and place on ungreased cookie sheet 6 cms apart and slightly flatten.
Bake for 15 minutes - check regularly all ovens are different!
Each cookie contains 1/3 tablespoon coconut oil.
